🧂 Ingredients (Serves 4–6):

1 ½ lbs (680g) ground beef (or use half pork for more flavor)

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (or almond flour for low-carb)

2 large eggs

1/2 cup milk
-
1/2 small onion, finely diced

2–3 garlic cloves, minced

2 tsp Italian seasoning
-
1/2 tsp salt + 1/4 tsp black pepper

2 tbsp chopped fresh parsley (or 1 tsp dried)

Optional: 1/4 cup marinara sauce or ketchup (for inside the loaf)
For the topping:

1/3 cup marinara sauce or ketchup

2 tbsp grated Parmesan

Optional: a sprinkle of mozzarella
🔥 Instructions:
1. Preheat oven:

Set to 375°F (190°C).
2. Mix the loaf:

In a large bowl, combine all meatloaf ingredients.

Mix gently with clean hands or a spatula — don’t overmix, or it’ll be tough.
3. Shape:

Form the mixture into a loaf shape and place it on a lined or greased baking sheet (or in a loaf pan, though free-form gives better edges).
4. Add topping:

Spread marinara or ketchup over the top. Sprinkle with Parmesan (and mozzarella if using).
5. Bake:

Bake for 45–55 minutes, or until the internal temp reaches 160°F (71°C).

Let rest 5–10 minutes before slicing to retain juices.
