🧂 Ingredients (Makes ~15 balls):

2 cups mashed potatoes (cool or cold, not too soft)

1 cup shredded cheese (mozzarella, cheddar, or a mix)

1/2 cup breadcrumbs (plus more for coating)

1 egg

2 tbsp chopped parsley or green onions (optional)

Salt & pepper to taste

Cubes of cheese (for stuffing, optional)
For coating & frying:

1 beaten egg

1 cup breadcrumbs

Oil for frying (vegetable or canola)
🥣 Instructions:
1. Make the potato mix:

In a bowl, mix mashed potatoes, shredded cheese, 1 egg, breadcrumbs, herbs (if using), and season with salt & pepper.

Chill for 15–30 minutes if mixture is soft.
2. Form balls:

Scoop and roll mixture into balls (~1.5 inches wide).

Optional: Stuff each ball with a small cube of cheese for an extra gooey center.
3. Coat:

Dip each ball into beaten egg, then roll in breadcrumbs until fully coated.
4. Fry:

Heat oil to 350°F (175°C).

Fry balls in batches until golden brown and crispy (about 2–3 minutes).

Drain on paper towels or a wire rack.

Baked version: Bake at 400°F (200°C) for 15–20 minutes until golden.
