🥗 Mediterranean Chickpea Salad
🧂 Ingredients (Serves 4):

1 can (15 oz) chickpeas (garbanzo beans), drained & rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 red onion, thinly sliced or finely chopped

1/2 red bell pepper, diced
-
1/4 cup Kalamata olives, sliced (optional)

1/4 cup crumbled feta cheese
-
2 tbsp fresh parsley or mint, chopped
For the dressing:

3 tbsp olive oil
-
1–2 tbsp lemon juice (or red wine vinegar)

1 clove garlic, minced
-
1/2 tsp dried oregano
-
Salt and pepper to taste
🥣 Instructions:

Make the dressing:
In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. -
Combine the salad:
In a large bowl, add chickpeas, veggies, olives, feta, and herbs. -
Toss:
Pour the dressing over the salad and toss to combine. Let sit for 10–15 minutes to marinate for best flavor. -
Serve:
Enjoy chilled or at room temperature.
