Walking taco casserole

Walking Taco Casserole is a fun and hearty twist on the classic “walking taco” — typically a bag of chips topped with taco fillings. This casserole version combines all the same flavors in a hot, baked dish that’s perfect for weeknight dinners or potlucks.


🌮 Walking Taco Casserole Recipe

🧂 Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, diced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained

  • 1 can (15 oz) corn, drained

  • 1 can (15 oz) black beans, drained and rinsed

  • 1½ cups shredded cheddar or Mexican blend cheese

  • 3 cups crushed tortilla chips (or use individual chip bags for serving)

  • Optional toppings: shredded lettuce, diced tomato, sour cream, jalapeños, salsa, guacamole


🔥 Instructions:

  1. Preheat oven to 350°F (175°C).

  2. In a large skillet, cook the ground beef and onion over medium heat until browned. Drain excess grease.

  3. Stir in the taco seasoning, diced tomatoes, corn, and black beans. Simmer for 5 minutes.

  4. In a greased 9×13″ baking dish, layer half of the crushed chips, then the meat mixture, then half the cheese.

  5. Repeat with the remaining chips and cheese.

  6. Bake uncovered for 15–20 minutes, or until cheese is melted and bubbly.

  7. Top with your favorite fresh toppings and serve warm!


🧡 Tips:

  • Want to make it spicy? Add a chopped jalapeño or a few dashes of hot sauce to the beef mixture.

  • Making it for a party? Serve the meat mixture in a slow cooker and let guests build their own walking taco bowls.
