Here’s a delicious, easy recipe for Crispy Cabbage and Egg Fritters — savory, golden, and great as a snack, side, or light meal. Think of them like veggie pancakes: crispy on the outside, tender inside, and packed with flavor.


🥬 Crispy Cabbage and Egg Fritters

Ingredients:

  • 2 cups finely shredded cabbage (green or napa)

  • 2 eggs

  • ¼ cup flour (all-purpose or chickpea for gluten-free)

  • 2 green onions, chopped

  • 1 garlic clove, minced (optional)

  • Salt and pepper to taste

  • Pinch of chili flakes or paprika (optional)

  • Oil for pan-frying


🔥 Instructions:

  1. Prep the Cabbage:

    • Toss shredded cabbage with a little salt and let sit for 10 minutes.

    • Squeeze out excess moisture with your hands or a clean towel.

  2. Make the Batter:

    • In a bowl, whisk eggs, then stir in flour, green onions, garlic, salt, pepper, and spices.

    • Add the cabbage and mix until evenly coated. The mixture should be thick, not runny.

  3. Cook the Fritters:

    • Heat a thin layer of oil in a skillet over medium heat.

    • Drop spoonfuls of the cabbage mixture into the pan and flatten slightly.

    • Fry for 2–3 minutes per side until golden brown and crispy.

    • Drain on paper towels.

  4. Serve Warm:

    • Serve with sour cream, yogurt, sriracha mayo, or a soy dipping sauce.

  • Add grated carrot, zucchini, or cheese for variety.

  • Use chickpea flour and add turmeric and cumin for an Indian-inspired twist.
