Cucumber salad

Here’s a refreshing and simple Cucumber Salad recipe—crisp, cool, and perfect as a side dish for almost any meal!


🥒 Classic Cucumber Salad

Ingredients:

  • 2 large cucumbers (English or Persian are ideal), thinly sliced

  • ½ small red onion, thinly sliced

  • ¼ cup white vinegar or apple cider vinegar

  • 1–2 tsp sugar (adjust to taste)

  • 2 tbsp water

  • Salt & pepper to taste

  • Optional: fresh dill or parsley, chopped

  • Optional: 2 tbsp sour cream or Greek yogurt (for a creamy version)


Instructions:

  1. Slice cucumbers & onion: Use a sharp knife or mandolin for even, thin slices.

  2. Mix dressing: In a small bowl, whisk together vinegar, sugar, water, salt, and pepper until sugar dissolves.

  3. Combine: Toss cucumbers and onions in a bowl with the dressing. Add chopped herbs if using.

  4. Chill: Refrigerate for at least 20–30 minutes (or up to 2 hours) before serving for best flavor.

  5. Serve cold, as a light, tangy side.


🧑‍🍳 Variations:

  • Creamy version: Mix in sour cream or yogurt with a pinch of garlic powder.

  • Asian-style: Use rice vinegar, a touch of sesame oil, and chili flakes.

  • Sweet & tangy: Add more sugar and a splash of lemon juice.

  • Add-ins: Cherry tomatoes, feta, avocado, or radishes.
