🥞 Classic Fluffy Pancakes
🛒 Ingredients (Makes about 8 medium pancakes)

1 cup (125g) all-purpose flour

2 tbsp sugar

2 tsp baking powder

¼ tsp salt

1 cup (240ml) milk

1 large egg
-
2 tbsp melted butter (plus more for the pan)

1 tsp vanilla extract (optional)

Mix dry ingredients
In a bowl, whisk together flour, sugar, baking powder, and salt. -
Combine wet ingredients
In another bowl, whisk milk, egg, melted butter, and vanilla until smooth. -
Make the batter
Pour the wet mixture into the dry and stir just until combined—lumps are okay! Don’t overmix. -
Cook the pancakes

Heat a nonstick pan or griddle over medium heat and lightly grease with butter or oil.

Pour about ¼ cup batter per pancake.

Cook until bubbles form and the edges look set (1–2 minutes), then flip and cook another 1–2 minutes until golden.

Top with butter, maple syrup, fruit, or your favorite toppings.

🫐 Add blueberries, bananas, or chocolate chips to the batter

🥞 Make it buttermilk: substitute milk with buttermilk and reduce baking powder to 1 tsp (add ½ tsp baking soda)
