🌮 Rolled Taquitos (Flautas)

✅ Ingredients:

2 cups shredded chicken, beef, or beans

1 tsp ground cumin

1 tsp chili powder

Salt & pepper to taste

1 cup shredded cheese (cheddar, jack, or Mexican blend)

12 small corn tortillas (or flour if preferred)

Oil for frying (or brushing for baking/air frying)
🥣 Instructions:

Prep Filling:

Mix shredded meat (or beans), spices, and cheese in a bowl.

Soften Tortillas:

Warm tortillas on a skillet or microwave between damp paper towels for 30 seconds until pliable.

Roll Taquitos:

Spoon 2–3 tablespoons of filling onto each tortilla.

Tightly roll and secure seam-side down with a toothpick if needed.

Cook:

Fry: Heat ½ inch oil in a skillet. Fry taquitos seam-side down until golden and crispy (2–3 min per side). Drain on paper towels.

Bake: Brush with oil and bake at 425°F (220°C) for 15–18 minutes.

Air Fry: Spray with oil and air fry at 400°F (200°C) for 8–10 minutes.

🍅 Fresh Salsa (Salsa Mexicana)
✅ Ingredients:

4–5 ripe Roma tomatoes, finely chopped

¼ white onion, finely diced
-
1–2 jalapeños or serrano peppers, minced (adjust to heat preference)

1 handful fresh cilantro, chopped
-
Juice of 1 lime

Salt to taste
🥣 Instructions:

Mix all ingredients in a bowl.

Let sit for 10–15 minutes so flavors meld.

Taste and adjust lime and salt.
For a smoother salsa: pulse everything in a blender or food processor 3–4 times.
🥑 Classic Guacamole
✅ Ingredients:

2 ripe avocados

¼ cup finely chopped onion
-
1 small tomato, diced (optional)

1 tbsp cilantro, chopped
-
Juice of 1 lime
-
Salt to taste
-
Optional: Minced jalapeño for heat

In a bowl, mash avocados with a fork (chunky or smooth, your call).

Stir in onion, tomato, cilantro, lime juice, and salt.

Serve immediately or cover with plastic wrap pressed directly on top to prevent browning.
