🧀 Ingredients:

1/2 lb Mexican chorizo, casing removed

1 tbsp olive oil (if needed, depending on fat from chorizo)

1/2 small onion, finely chopped

2 cloves garlic, minced

1/2 cup roasted green chiles, chopped (Hatch green chiles if possible)

8 oz shredded Oaxaca cheese (or mozzarella)

4 oz shredded Monterey Jack cheese

4 oz shredded sharp cheddar cheese

Optional: pinch of cumin, smoked paprika

Toppings (optional): chopped cilantro, diced tomato, jalapeños, lime wedges

🔥 Instructions:

Cook the chorizo:
In a cast iron skillet or oven-safe pan over medium heat, cook the chorizo until browned and cooked through (5–7 minutes). Use a spoon to break it up as it cooks. Remove with a slotted spoon and set aside, leaving fat in the pan. -
Sauté aromatics:
If needed, add a bit of olive oil. Sauté onion in the chorizo fat until soft (about 3 minutes), then add garlic and cook another 30 seconds until fragrant. -
Add green chiles:
Stir in the chopped green chiles and optional spices. Cook for another 1–2 minutes to blend flavors. -
Layer the cheese:
Turn off heat. Evenly distribute the chorizo over the sautéed mixture, then top with all the shredded cheeses. -
Bake or broil:
Place the skillet under a broiler or into a 400°F (200°C) oven for about 5–7 minutes, or until the cheese is fully melted, bubbly, and slightly browned on top. -
Serve immediately:
Garnish with optional toppings. Scoop up with tortilla chips or warm tortillas.
