🧅 French Onion Beef and Noodles
🍲 Ingredients:

1.5–2 lbs beef stew meat or chuck roast, cut into bite-size pieces

2 tbsp olive oil or butter

2 large yellow onions, thinly sliced

2 cloves garlic, minced
-
1 tbsp Worcestershire sauce
-
1/2 cup dry white wine (or beef broth)

1 (10.5 oz) can French onion soup (like Campbell’s)

3–4 cups beef broth
-
1 tsp dried thyme
-
8 oz wide egg noodles
-
1 cup shredded Gruyère or Swiss cheese (optional, but delicious)

Salt & pepper, to taste

Fresh parsley, for garnish
🍳 Instructions:

Sear the beef:
In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium-high. Season beef with salt and pepper, then sear in batches until browned on all sides. Remove and set aside. -
Caramelize onions:
Reduce heat to medium-low. Add more oil or butter if needed. Add onions and cook slowly for 15–20 minutes, stirring occasionally, until deeply golden and caramelized. Don’t rush this step — it’s where the flavor builds. -
Deglaze & add flavor:
Add garlic and cook 1 minute. Pour in wine (or broth), scraping up any browned bits from the bottom. Stir in Worcestershire sauce. -
Simmer:
Return the beef to the pot. Add French onion soup, 3 cups of beef broth, and thyme. Bring to a boil, then reduce heat and simmer, covered, for 45–60 minutes, or until beef is fork-tender. Add more broth as needed. -
Cook noodles:
Add the egg noodles directly into the pot and simmer uncovered, stirring occasionally, for 8–10 minutes until noodles are tender. Add more broth if the mixture is too thick. -
Add cheese (optional):
Stir in the shredded cheese until melted, or sprinkle over the top and cover to let it melt. -
Finish & serve:
Taste and adjust seasoning. Garnish with fresh parsley. Serve hot.

Use ground beef instead of stew meat for a faster version (brown and drain before adding).

For a creamy version, stir in 1/4 cup sour cream at the end.

Want it slow-cooked? Brown everything first, then simmer in a slow cooker on LOW for 6–8 hours, adding noodles in the last 30 minutes.
