🥦🍄 Broccoli and Mushroom Stir Fry

Ingredients:

2 cups broccoli florets

1 cup mushrooms, sliced (button or cremini work great)

2 tbsp vegetable oil (or sesame oil for extra flavor)

3 garlic cloves, minced

1-inch piece fresh ginger, grated (optional)

3 tbsp soy sauce (or tamari for gluten-free)

1 tbsp oyster sauce (optional, or use hoisin sauce for a sweeter taste)

1 tsp sugar or honey

1/4 cup water or vegetable broth

1 tsp cornstarch mixed with 2 tsp water (optional, for thickening sauce)

Sesame seeds and sliced green onions for garnish (optional)
Instructions:

Prep veggies:
Wash and cut broccoli into bite-sized florets. Slice mushrooms. -
Heat oil:
In a large skillet or wok, heat oil over medium-high heat. -
Sauté aromatics:
Add minced garlic and ginger, stir-fry for 30 seconds until fragrant. -
Cook veggies:
Add broccoli and mushrooms. Stir-fry for 3-4 minutes until they start to soften. -
Add sauce:
In a small bowl, mix soy sauce, oyster sauce, sugar, and water/broth. Pour over the veggies. -
Simmer:
Stir and cook for another 3-4 minutes until broccoli is tender but still crisp. -
Thicken sauce (optional):
Stir in the cornstarch slurry and cook for 1 more minute until sauce thickens. -
Serve:
Garnish with sesame seeds and sliced green onions if desired. Serve hot over steamed rice or noodles.
