🥔 Classic Potato Croquettes

Ingredients:
For the filling:

2 cups mashed potatoes (firm and not too creamy)

1 egg yolk

½ cup grated cheese (Parmesan, cheddar, or mozzarella)

Salt and pepper to taste

Optional: chopped parsley, cooked bacon bits, or sautéed onions
For the coating:

1 cup all-purpose flour

2 eggs, beaten
-
1½ cups breadcrumbs (Panko or regular)
For frying:

Oil for deep frying (vegetable or canola)
Instructions:

Make the Mixture:

In a bowl, combine mashed potatoes, egg yolk, cheese, salt, pepper, and any optional mix-ins.

Mix well and shape into logs or balls (about 2 inches wide).

Place on a tray and refrigerate for 20–30 minutes to firm up.

Bread the Croquettes:

Dredge each croquette in flour, dip in beaten egg, then coat with breadcrumbs. Press gently to help the coating stick.

Fry:

Heat oil in a deep pan to 350°F (175°C).

Fry croquettes in batches until golden brown, about 2–3 minutes per side.

Drain on paper towels.

Best served hot and crispy with a dipping sauce like garlic aioli, spicy mayo, or ketchup.
