🥟 Apple Pie Egg Rolls
🛒 Ingredients (Makes 10–12 rolls)
For the filling:

2 medium apples (Granny Smith or Honeycrisp), peeled and diced small

2 tbsp butter
-
2 tbsp brown sugar
-
1 tbsp granulated sugar
-
1 tsp cinnamon
-
½ tsp vanilla extract
-
1 tsp cornstarch mixed with 1 tbsp water (for thickening)

Pinch of salt
For the rolls:

10–12 egg roll wrappers
-
Oil for frying (vegetable or canola)
Optional topping:

Powdered sugar or cinnamon-sugar
-
Caramel sauce or vanilla ice cream for dipping
👩🍳 Instructions

Make the filling:
In a skillet over medium heat, melt butter. Add apples, sugars, cinnamon, and salt. Cook 5–7 minutes, until apples are tender.
Stir in vanilla and cornstarch slurry. Cook 1–2 more minutes, until thickened. Remove from heat and cool slightly. -
Assemble egg rolls:

Place 2 tbsp of apple filling in the center of each wrapper.

Fold the bottom corner over filling, then sides, then roll tightly. Seal the top edge with a dab of water.

Fry:

Heat oil to 350°F (175°C) in a deep pan. Fry rolls 2–3 at a time for about 2 minutes per side, until golden brown.

Drain on paper towels.

Serve warm:
Dust with powdered sugar or cinnamon-sugar. Serve with caramel sauce or ice cream if desired.
🔄 Air Fryer or Oven Instructions

Air Fryer: Spray with oil and cook at 375°F (190°C) for 8–10 minutes, flipping halfway.

Oven: Brush with oil or butter and bake at 400°F (200°C) for 15–18 minutes, turning once.
