🥩 Tender Beef Tips with Gravy
Ingredients (Serves 4–6):

1½–2 lbs beef sirloin tips, stew meat, or chuck roast (cut into 1-inch cubes)

2 tbsp oil (for browning)

1 small onion, chopped

2–3 cloves garlic, minced

2 cups beef broth
-
1 tbsp Worcestershire sauce
-
1 tsp soy sauce (optional, adds depth)

1 tsp dried thyme or Italian seasoning

Salt and pepper, to taste

2 tbsp cornstarch + 2 tbsp water (for thickening)
🥘 Instructions:

Brown the beef:

Heat oil in a large skillet or pot over medium-high heat.

Season beef with salt and pepper. Sear in batches until browned. Remove and set aside.

Sauté onions and garlic:

In the same pan, lower heat to medium. Add chopped onions and cook 3–4 mins.

Add garlic, cook 30 seconds until fragrant.

Deglaze and simmer:

Add beef broth, Worcestershire, soy sauce, and thyme. Scrape up browned bits.

Return beef to the pan. Bring to a simmer, then cover and reduce heat to low.

Cook until tender:

Simmer 1.5 to 2 hours (for chuck/stew meat) or 30–45 mins (for sirloin), until beef is fork-tender.

Thicken the gravy:

Mix cornstarch and water into a slurry. Stir into simmering sauce and cook until thickened (2–3 mins).

Ladle over mashed potatoes, egg noodles, or rice.

Use a slow cooker: Cook on low for 6–7 hours.
