Here’s a simple, nourishing, and budget-friendly recipe for Cabbage with Eggs—a humble dish that’s popular in many cultures and can be made in under 20 minutes.


🥬 Cabbage with Eggs (Stir-Fried Style)

Ingredients:

  • ½ medium head of cabbage, thinly sliced (about 4 cups)

  • 2–3 large eggs

  • 2–3 tbsp oil (vegetable, olive, or sesame oil)

  • 2 garlic cloves, minced (optional)

  • ½ onion, thinly sliced (optional)

  • Salt and pepper to taste

  • 1 tsp soy sauce (optional, for flavor)

  • ½ tsp sesame oil (optional, for aroma)


Instructions:

  1. Prep the Cabbage:

    • Wash and thinly slice the cabbage. Set aside.

  2. Scramble the Eggs:

    • Heat 1 tbsp oil in a skillet or wok over medium heat.

    • Crack in the eggs, scramble lightly, and cook until just set. Remove and set aside.

  3. Sauté the Aromatics:

    • In the same pan, add another 1–2 tbsp oil.

    • Sauté the garlic and onion (if using) until fragrant, about 1–2 minutes.

  4. Cook the Cabbage:

    • Add the sliced cabbage and stir-fry for 5–7 minutes until tender but still a little crisp.

    • Season with salt, pepper, and soy sauce if using.

  5. Add the Eggs Back:

    • Return the scrambled eggs to the pan and mix them into the cabbage.

    • Drizzle with sesame oil if desired and adjust seasoning.

  6. Serve:

    • Serve hot as a light main dish or a side with rice, noodles, or bread.


🌶️ Optional Add-ins:

  • A dash of chili flakes or hot sauce for heat

  • A sprinkle of green onions or cilantro for freshness

  • A few drops of vinegar for tang (try rice vinegar or apple cider vinegar)
