For the Dish:

  • 1 lb cheese tortellini (fresh or refrigerated)

  • 1 lb thinly sliced steak (ribeye or sirloin), cut into bite-size strips

  • 1 tbsp olive oil

  • 1 small onion, thinly sliced

  • 1 small green bell pepper, thinly sliced (optional)

  • 1 clove garlic, minced

  • Salt & black pepper, to taste

For the Provolone Sauce:

  • 2 tbsp butter

  • 2 tbsp flour

  • 1 1/4 cups whole milk (or half-and-half for richness)

  • 1/2 cup heavy cream

  • 1 1/2 cups shredded provolone cheese

  • 1/4 cup grated Parmesan (optional, for depth)

  • Salt & pepper, to taste

  • Pinch of nutmeg (optional, enhances cheese flavor)


๐Ÿ‘จโ€๐Ÿณ Instructions

1. Cook the Tortellini

Cook tortellini according to package directions. Drain and set aside, tossing with a little olive oil to prevent sticking.


2. Sear the Steak

  • Heat olive oil in a large skillet over medium-high heat.

  • Add sliced steak, season with salt and pepper, and cook 2โ€“3 minutes, until just browned. Remove and set aside.


3. Sautรฉ Onions & Peppers

  • In the same skillet, add onions and peppers.

  • Cook until softened and slightly caramelized, about 5โ€“7 minutes.

  • Add minced garlic and cook 30 seconds more.


4. Make the Provolone Sauce

  • In a separate saucepan, melt butter over medium heat.

  • Whisk in flour and cook for 1 minute to form a roux.

  • Slowly whisk in milk and cream. Stir until smooth and thickened (3โ€“5 minutes).

  • Stir in provolone (and Parmesan, if using) until melted and velvety.

  • Season with salt, pepper, and a pinch of nutmeg if desired.


5. Combine Everything

  • Return steak to the skillet with onions and peppers.

  • Add cooked tortellini.

  • Pour in the provolone sauce and gently toss to coat everything evenly.

  • Cook for 1โ€“2 minutes until everything is hot and coated.

  • Garnish with extra provolone, cracked pepper, and chopped parsley if desired.

  • Serve hot โ€” preferably with garlic bread or a crisp salad.
