🍞 Ingredients:

6–7 cups cubed brioche or challah bread (day-old preferred)

4 large eggs

1 cup milk (or half & half for richness)

1 tsp ground cinnamon

1 tsp vanilla extract

For the cinnamon sugar topping:

1/4 cup melted butter

1/3 cup granulated sugar

Preheat oven to 350°F (175°C).
Grease a 12-cup muffin tin well or line with parchment paper liners. -
Prep the bread:
Cut the bread into small cubes (about 1-inch). Let them sit out for 10–15 minutes if fresh—dry bread soaks up custard better. -
Make the custard mixture:
In a large bowl, whisk together eggs, milk, cream (if using), sugar, cinnamon, vanilla, and salt. -
Soak the bread:
Add bread cubes to the custard and toss to coat. Let sit for 5–10 minutes so it fully absorbs the liquid. -
Fill muffin tin:
Scoop soaked bread mixture into each muffin cup, pressing down gently to pack. -
Bake:
Bake for 20–25 minutes, until set and golden on top. -
Add cinnamon sugar topping:
While warm, brush each muffin with melted butter, then dip or sprinkle generously with cinnamon sugar. -
Cool slightly and serve:
Best warm, but still delicious at room temperature!
