Corned Beef Hash

Posted on June 22, 2025
Here’s a classic Corned Beef Hash recipe — crispy, savory, and perfect for breakfast, brunch, or a quick dinner. It’s a great way to use up leftover corned beef too!

Corned Beef Hash

Ingredients (Serves 4):

  • 2 tbsp butter or oil

  • 1 small onion, finely chopped

  • 1 small bell pepper, diced (optional)

  • 2 cups cooked corned beef, chopped

  • 2–3 cups cooked potatoes, diced (leftover boiled or roasted work well; or use canned diced potatoes)

  • Salt and pepper to taste

  • Fresh parsley, for garnish (optional)

  • Eggs (optional, for serving)

Instructions:

  1. Sauté the veggies:

    • Heat butter or oil in a large skillet over medium heat.

    • Add onion (and bell pepper if using) and sauté until soft, about 5 minutes.

  2. Add corned beef and potatoes:

    • Stir in the chopped corned beef and potatoes.

    • Press the mixture into an even layer in the pan.

  3. Crisp it up:

    • Let it cook undisturbed for 5–7 minutes to develop a golden crust.

    • Flip sections over and cook another 5 minutes. Stir occasionally if you like it less crispy.

  4. Season and serve:

    • Season with salt and pepper to taste.

    • Garnish with chopped parsley if desired.

Optional – Add Eggs:

  • Crack eggs directly on top during the last few minutes, cover, and cook until the whites are set.

  • Or fry eggs separately and serve on top.

Tips:

  • If you’re using raw potatoes, dice them small and parboil them for 5–6 minutes first.

  • A nonstick or cast iron skillet works best for crispiness.
