Crockpot Beef and Broccoli

Here’s a Crockpot Beef and Broccoli recipe — easy, flavorful, and perfect for a weeknight meal with minimal effort.


Crockpot Beef and Broccoli

Ingredients:

For the beef:

  • 1.5 to 2 lbs flank steak or sirloin, thinly sliced across the grain

  • 1 cup beef broth

  • 1/2 cup low-sodium soy sauce

  • 1/3 cup brown sugar

  • 1 tbsp sesame oil (optional for flavor)

  • 3 cloves garlic, minced

  • 1 tsp grated fresh ginger (or 1/2 tsp ground ginger)

  • 1/4 tsp black pepper

To thicken sauce:

  • 2 tbsp cornstarch

  • 2 tbsp cold water

For the broccoli:

  • 3 cups broccoli florets (fresh or frozen)


Instructions:

  1. Add to Crockpot:

    • Place sliced beef in the crockpot.

    • In a bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, garlic, ginger, and pepper. Pour over the beef.

  2. Cook:

    • Cover and cook on low for 4–5 hours or high for 2.5–3 hours, until beef is tender.

  3. Thicken the sauce:

    • In a small bowl, mix cornstarch and cold water to make a slurry.

    • Pour into the crockpot and stir. Cover and cook on high for 20–30 more minutes, until the sauce thickens.

  4. Add broccoli:

    • Steam broccoli separately (microwave or stovetop) until just tender, then stir it into the crockpot just before serving. (Adding it too early makes it mushy.)

  5. Serve:

    • Serve hot over steamed white rice, jasmine rice, or cauliflower rice.


Optional Garnishes:

  • Sesame seeds

  • Sliced green onions

  • Chili flakes for heat
