Crockpot Beef and Broccoli
Ingredients:
For the beef:

1.5 to 2 lbs flank steak or sirloin, thinly sliced across the grain

1 cup beef broth

1/2 cup low-sodium soy sauce

1/3 cup brown sugar

1 tbsp sesame oil (optional for flavor)

3 cloves garlic, minced
-
1 tsp grated fresh ginger (or 1/2 tsp ground ginger)

1/4 tsp black pepper
To thicken sauce:

2 tbsp cornstarch
-
2 tbsp cold water
For the broccoli:

3 cups broccoli florets (fresh or frozen)
Instructions:

Add to Crockpot:

Place sliced beef in the crockpot.

In a bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, garlic, ginger, and pepper. Pour over the beef.

Cook:

Cover and cook on low for 4–5 hours or high for 2.5–3 hours, until beef is tender.

Thicken the sauce:

In a small bowl, mix cornstarch and cold water to make a slurry.

Pour into the crockpot and stir. Cover and cook on high for 20–30 more minutes, until the sauce thickens.

Add broccoli:

Steam broccoli separately (microwave or stovetop) until just tender, then stir it into the crockpot just before serving. (Adding it too early makes it mushy.)

Serve:

Serve hot over steamed white rice, jasmine rice, or cauliflower rice.
