🧀 Crockpot Cheesy Ranch Beef Pasta Shells

Ingredients:

  • 1 lb ground beef

  • 1 packet (1 oz) ranch seasoning mix

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), undrained

  • 1 ½ cups beef broth

  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)

  • 8 oz medium pasta shells (uncooked)

  • ½ cup cream cheese (softened)

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • Salt & black pepper to taste

  • Optional garnish: chopped parsley or green onions


Instructions:

  1. Brown the Beef:

    • In a skillet over medium heat, cook the ground beef until no longer pink. Drain excess grease.

    • Season lightly with salt, pepper, garlic powder, and onion powder.

  2. Add to Crockpot:

    • Transfer cooked beef to your crockpot.

    • Stir in ranch seasoning, cream of mushroom soup, Rotel, and beef broth.

    • Mix well to combine.

  3. Cook:

    • Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.

  4. Add Pasta & Cheese:

    • About 30 minutes before serving, stir in the uncooked pasta shells and cream cheese.

    • Make sure pasta is submerged in the liquid. Add a little extra broth or water if it looks too thick.

  5. Final Touches:

    • After 30 minutes, check the pasta for doneness.

    • Stir in shredded cheese until melted and creamy.

    • Adjust salt and pepper to taste.

  6. Serve:

    • Garnish with parsley or green onions if desired.

    • Serve hot with a side of garlic bread or a green salad.
