1–2 eggs, beaten

Breadcrumbs (panko or regular)

Make the Filling:

In a bowl, mix mashed potatoes with egg yolk, cheese, salt, pepper, nutmeg, and herbs.

Shape into small logs, patties, or balls. Chill for 20–30 minutes to firm up.

Bread the Croquettes:

Dredge each piece in flour, dip in beaten egg, then coat in breadcrumbs.

For extra crispiness, double dip: egg → breadcrumbs → egg → breadcrumbs again.

Heat oil (about 350°F / 175°C) in a deep skillet or fryer.

Fry croquettes in batches for 2–3 minutes until golden brown.
