Croquette

A croquette is a crispy, golden bite-sized roll or patty typically made from a mashed or finely chopped filling that’s breaded and fried. Popular worldwide — from French bistros to Japanese bento boxes — croquettes are savory, satisfying, and versatile.


🥔 Classic Potato Croquettes (French-style)

Ingredients:

  • 2 cups mashed potatoes (well seasoned, preferably cold)

  • 1 egg yolk

  • ½ cup grated cheese (Gruyère, cheddar, or Parmesan)

  • Salt & pepper, to taste

  • ¼ teaspoon nutmeg (optional)

  • 1 tablespoon chopped parsley or chives (optional)

  • Flour, for dredging

  • 1–2 eggs, beaten

  • Breadcrumbs (panko or regular)

  • Oil, for frying


🔥 Instructions:

  1. Make the Filling:

    • In a bowl, mix mashed potatoes with egg yolk, cheese, salt, pepper, nutmeg, and herbs.

    • Shape into small logs, patties, or balls. Chill for 20–30 minutes to firm up.

  2. Bread the Croquettes:

    • Dredge each piece in flour, dip in beaten egg, then coat in breadcrumbs.

    • For extra crispiness, double dip: egg → breadcrumbs → egg → breadcrumbs again.

  3. Fry:

    • Heat oil (about 350°F / 175°C) in a deep skillet or fryer.

    • Fry croquettes in batches for 2–3 minutes until golden brown.

    • Drain on paper towels.

  4. Serve:

    • Serve hot with dipping sauce like garlic aioli, spicy ketchup, or mustard.


🧀 Variations:

  • Ham or Chicken Croquettes: Mix in finely chopped cooked meat.

  • Seafood Croquettes: Use flaked cod, crab, or shrimp.

  • Bechamel Croquettes (Croquetas): Use thick béchamel sauce (common in Spain).
