🍕 Keto Pepperoni Cheese Pizza Bites

Ingredients (Makes ~20–24 bites):

  • 1½ cups shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 3/4 cup almond flour

  • 2 large eggs

  • 1/2 tsp garlic powder

  • 1/2 tsp Italian seasoning

  • 1/4 tsp crushed red pepper flakes (optional, for heat)

  • 1/2 cup mini pepperoni (or chopped regular pepperoni)

  • Optional: sugar-free marinara sauce for dipping


🔪 Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.

  2. Mix Ingredients:
    In a bowl, combine:

    • Mozzarella

    • Parmesan

    • Almond flour

    • Eggs

    • Garlic powder

    • Italian seasoning

    • Red pepper flakes (if using)

    • Fold in pepperoni pieces

  3. Scoop:
    Use a tablespoon or small cookie scoop to portion the dough into balls. Place them 1 inch apart on the baking sheet. Flatten slightly with fingers or a spoon.

  4. Bake:
    Bake for 12–15 minutes, or until golden brown and firm.

  5. Cool & Serve:
    Let cool slightly. Serve with warm sugar-free marinara or pizza sauce for dipping.

  • Extra crispy: Broil for 1–2 minutes at the end of baking.

  • Nut-free option: Substitute almond flour with 1/4 cup coconut flour (the dough will be drier — add 1 tbsp water if needed).

  • Air fryer version: Air fry at 375°F for 8–10 minutes.
