Lemon Truffles

Bright, creamy, and bite-sized — Lemon Truffles are the perfect treat when you want something rich but refreshing. These no-bake delights have a sweet-tart flavor, a smooth white chocolate base, and a melt-in-your-mouth texture.


🍋✨ Lemon Truffles

🍽️ Makes: ~20 truffles

⏱️ Ready in: 25 minutes (+ chilling time)


📝 Ingredients:

  • 1 1/2 cups white chocolate chips or chopped white chocolate

  • 1/4 cup heavy cream

  • 2 tbsp unsalted butter

  • 1 tbsp lemon zest

  • 1–2 tbsp lemon juice, freshly squeezed

  • Pinch of salt

  • Optional: few drops of lemon extract for more punch

  • Powdered sugar, crushed cookies, or shredded coconut for coating


👩‍🍳 Instructions:

1. Melt the Base:

  • In a heatproof bowl, add white chocolate, butter, and cream.

  • Gently melt over a double boiler or in the microwave (20–30 sec bursts), stirring until smooth.

2. Flavor It:

  • Stir in lemon zest, lemon juice, salt, and lemon extract (if using).

  • Taste and adjust lemon flavor if needed.

3. Chill to Set:

  • Cover the bowl and refrigerate for 1–2 hours, until the mixture is firm enough to scoop.

4. Roll the Truffles:

  • Scoop small amounts (about 1 tbsp) and roll into balls.

  • Roll each truffle in powdered sugar, cookie crumbs, or coconut.

5. Chill Again:

  • Place on a tray and chill for 15–30 more minutes to firm up.


🌟 Coating Ideas:

  • Powdered sugar – classic and soft

  • Graham cracker crumbs – like lemon cheesecake bites

  • Shredded coconut – tropical vibe

  • White chocolate drizzle – elegant finish


🧊 Storage:

  • Keep in the fridge for up to 1 week.

  • Best served slightly chilled but not cold.
