Ingredients (Serves 4):

2 large cucumbers, thinly sliced

3 tbsp red wine vinegar or apple cider vinegar

1 tsp sugar or honey (optional, balances acidity)

Instructions:

Prepare the veggies:
In a large bowl, combine cucumbers, tomatoes, and onions. -
Make the marinade:
In a small bowl, whisk together olive oil, vinegar, garlic, sugar (if using), oregano, salt, and pepper. -
Combine:
Pour the marinade over the veggies and toss gently to coat evenly. -
Marinate:
Cover and refrigerate for at least 1 hour, preferably 2โ3 hours or overnight, to let flavors meld. -
Serve:
