Here’s a bold and flavorful Mexican Carne Asada Marinade — perfect for tender, juicy, grilled beef with authentic citrusy, garlicky, and spicy flair. Ideal for flank steak, skirt steak, or even tri-tip.
🥩🌮 Mexican Carne Asada Marinade
Ingredients (Enough for 1½–2 lbs of steak)
-
¼ cup orange juice (fresh is best)
-
2 tbsp lime juice (about 1 lime)
-
2 tbsp soy sauce
-
2 tbsp olive oil
-
2 tbsp chopped cilantro (or more to taste)
-
3 cloves garlic, minced
-
1 jalapeño, seeded and minced (or ½ tsp chili flakes)
-
1 tsp ground cumin
-
1 tsp chili powder
-
½ tsp smoked paprika
-
½ tsp oregano (preferably Mexican oregano)
-
Salt & black pepper, to taste (start with 1 tsp salt and ½ tsp pepper)
🔧 Instructions
1. Mix marinade:
In a bowl or zip-top bag, whisk together all the ingredients until well combined.
2. Marinate the meat:
-
Add 1½–2 lbs of flank or skirt steak to the marinade.
-
Seal and refrigerate for 2 to 8 hours.
-
Do not exceed 8 hours, as the citrus can break down the meat too much.
3. Grill:
-
Remove steak from marinade and let come to room temp (15–20 mins).
-
Grill over high heat for 4–6 minutes per side, or until your desired doneness.
-
Rest 5–10 minutes, then slice against the grain.
📝 Pro Tips

🍽️ Serve With
