1Β½ cups semi-sweet or milk chocolate chips

1 tbsp coconut oil or shortening (for smoother chocolate, optional)

β 1. Make the Peanut Butter Mixture

In a large bowl, beat together peanut butter, butter, and vanilla until smooth.

Gradually mix in powdered sugar until a stiff but moldable dough forms. It should not be sticky β add more sugar if needed.
β 2. Form the Balls

Scoop about 1 tablespoon of dough at a time and roll into smooth balls.

Place on a parchment-lined baking sheet and chill in the refrigerator for 30 minutes or freezer for 15 minutes, until firm.
β 3. Dip in Chocolate

In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.

Using a fork or toothpick, dip each chilled ball into the chocolate, let excess drip off, and place back on parchment.

Chill until chocolate is set (about 15β20 minutes in the fridge).
