Here’s a wholesome, chewy, and satisfying treat: a Nut and Oat Cookie — perfect for a quick snack, lunchbox treat, or coffee companion. These cookies are packed with texture and flavor from hearty oats and crunchy nuts.


🍪🌰 Nut and Oat Cookies

🍽️ Makes: ~18–20 cookies

⏱️ Ready in: 30 minutes


📝 Ingredients:

  • 1 cup old-fashioned rolled oats

  • 3/4 cup all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 tsp cinnamon (optional)

  • 1/2 cup unsalted butter, softened

  • 1/2 cup brown sugar, packed

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1/2 cup chopped nuts (e.g. walnuts, pecans, almonds)

  • Optional: 1/4 cup shredded coconut, raisins, or dark chocolate chips


👩‍🍳 Instructions:

1. Preheat Oven:

  • Set to 350°F (175°C). Line a baking sheet with parchment paper.

2. Mix Dry Ingredients:

  • In a bowl, whisk together oats, flour, baking soda, salt, and cinnamon.

3. Cream Butter & Sugars:

  • In a separate large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).

  • Add egg and vanilla; beat until combined.

4. Combine Wet & Dry:

  • Stir dry ingredients into the wet mixture until just combined.

  • Fold in nuts and any optional mix-ins.

5. Scoop & Bake:

  • Drop spoonfuls (1.5 tbsp) onto the baking sheet, spacing 2 inches apart.

  • Bake 10–12 minutes, or until edges are golden but centers are still soft.

6. Cool:

  • Let cool on the pan for 5 minutes before transferring to a rack.


🌟 Variations:

  • Use maple syrup or honey for a more natural sweetener (adjust flour slightly).

  • Swap butter with coconut oil for a dairy-free version.

  • Add chia or flax seeds for a healthy boost.
