🍇 Old-Fashioned Raisin Pie
Ingredients:
For the filling:
-
2 cups raisins
-
2 cups water
-
1 cup brown sugar, packed
-
2 tbsp cornstarch
-
¼ tsp salt
-
1 tsp cinnamon
-
¼ tsp ground cloves (or nutmeg)
-
1 tbsp lemon juice (or apple cider vinegar for tang)
-
1 tbsp butter
For the crust:
-
1 double crust pie dough (store-bought or homemade)
🥧 Instructions:
-
Preheat oven to 400°F (200°C).
-
In a saucepan, combine raisins and water. Bring to a boil, then lower heat and simmer for 5–7 minutes to plump the raisins.
-
In a bowl, mix brown sugar, cornstarch, salt, cinnamon, and cloves. Add this mixture to the raisins and stir constantly over medium heat until thickened (3–5 minutes).
-
Remove from heat, stir in lemon juice and butter. Let cool slightly.
-
Line a 9-inch pie plate with the bottom crust. Pour in the raisin filling.
-
Cover with top crust (lattice or full), seal and flute edges. Cut slits in top if using a full crust.
-
Bake at 400°F for 25–30 minutes, until crust is golden and filling is bubbling.
-
Cool at room temperature. It sets best if cooled completely before slicing.
📝 Tips:
-
Serve with whipped cream or vanilla ice cream.
-
You can substitute half the raisins with golden raisins, currants, or dried cranberries.
-
Want a more molasses-like flavor? Add 1 tbsp of dark molasses to the filling.
