🧀 Parmesan Meatloaf Recipe
Ingredients (Serves 6):

1½ lbs (680g) ground beef (or mix beef + pork)

½ cup breadcrumbs (or crushed crackers)

¾ cup grated Parmesan cheese

2 eggs
-
½ cup milk
-
1 small onion, finely chopped
-
2–3 cloves garlic, minced
-
2 tbsp ketchup or tomato paste
-
1 tsp Italian seasoning
-
1 tsp salt
-
½ tsp black pepper
-
Optional: 1 tbsp chopped fresh parsley or basil
For the Topping:

¼ cup ketchup
-
2 tbsp Parmesan
-
Optional: sprinkle of shredded mozzarella
🔪 Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with foil or parchment.

In a large bowl, combine all meatloaf ingredients. Mix gently by hand or with a spoon—don’t overmix, or it could turn out dense.

Form into a loaf shape and place on prepared pan, or press into a loaf pan.

Mix topping ingredients and spread over the top of the loaf.

Bake for 45–55 minutes, or until internal temp reaches 160°F (71°C). You can broil the top for 1–2 minutes at the end to caramelize the glaze.

Let rest 5–10 minutes before slicing to hold its shape.
