Here’s a delicious and classic recipe for Pepper Steak β€” tender strips of beef stir-fried with colorful bell peppers in a savory, slightly sweet garlic-soy sauce. It’s quick, satisfying, and perfect over rice or cauliflower rice for a lower-carb option.

Ingredients (Serves 4):

For the steak:

  • 1 lb flank steak, sirloin, or skirt steak, thinly sliced against the grain

  • 1 tbsp cornstarch

  • 1 tbsp soy sauce

  • 1 tsp sesame oil (optional)

  • Pinch of black pepper

For the stir-fry:

  • 2 tbsp vegetable oil (divided)

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small onion, sliced (optional)

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, grated (optional)

For the sauce:

  • 1/4 cup soy sauce

  • 1/4 cup beef broth or water

  • 1 tbsp oyster sauce (optional, but adds richness)

  • 1 tbsp brown sugar or honey

  • 1 tsp cornstarch (for thickening)

  • 1/2 tsp black pepper

  • Red pepper flakes to taste (optional)

  1. Marinate the beef:
    In a bowl, toss sliced steak with soy sauce, cornstarch, sesame oil, and black pepper. Let it marinate while you prep other ingredients (10–15 minutes).

  2. Mix the sauce:
    In a small bowl, whisk together soy sauce, beef broth, oyster sauce, sugar, cornstarch, and black pepper. Set aside.

  3. Stir-fry peppers:
    Heat 1 tbsp oil in a large skillet or wok over high heat. Add bell peppers (and onion if using). Stir-fry 2–3 minutes until slightly tender-crisp. Remove and set aside.

  4. Cook the steak:
    Add the remaining oil to the pan. Add beef in a single layer (cook in batches if needed). Stir-fry 2–3 minutes until browned and just cooked through.

  5. Combine:
    Return peppers to the pan. Add garlic and ginger. Stir for 30 seconds.

  6. Add sauce:
    Pour in the sauce and toss everything together. Cook for 1–2 minutes, until the sauce thickens and coats the meat and veggies.

  7. Serve:
    Serve hot over steamed rice, noodles, or cauliflower rice.

  • Slice beef thin against the grain for tenderness.

  • Add mushrooms, snow peas, or broccoli for extra veggies.
