Rolled Taquitos fresh Salsa and Guacamole

Here’s a full spread for a homemade Mexican-inspired meal: Crispy Rolled Taquitos with Fresh Salsa and Classic Guacamole. Everything is made from scratch, simple, and super flavorful. Let’s break it down into three easy recipes:


🌮 Rolled Taquitos (Flautas)

🕒 Prep: 20 min | Cook: 15–20 min | Serves: 4 (12 taquitos)

✅ Ingredients:

  • 2 cups shredded chicken, beef, or beans

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • Salt & pepper to taste

  • 1 cup shredded cheese (cheddar, jack, or Mexican blend)

  • 12 small corn tortillas (or flour if preferred)

  • Oil for frying (or brushing for baking/air frying)

🥣 Instructions:

  1. Prep Filling:

    • Mix shredded meat (or beans), spices, and cheese in a bowl.

  2. Soften Tortillas:

    • Warm tortillas on a skillet or microwave between damp paper towels for 30 seconds until pliable.

  3. Roll Taquitos:

    • Spoon 2–3 tablespoons of filling onto each tortilla.

    • Tightly roll and secure seam-side down with a toothpick if needed.

  4. Cook:

    • Fry: Heat ½ inch oil in a skillet. Fry taquitos seam-side down until golden and crispy (2–3 min per side). Drain on paper towels.

    • Bake: Brush with oil and bake at 425°F (220°C) for 15–18 minutes.

    • Air Fry: Spray with oil and air fry at 400°F (200°C) for 8–10 minutes.


🍅 Fresh Salsa (Salsa Mexicana)

✅ Ingredients:

  • 4–5 ripe Roma tomatoes, finely chopped

  • ¼ white onion, finely diced

  • 1–2 jalapeños or serrano peppers, minced (adjust to heat preference)

  • 1 handful fresh cilantro, chopped

  • Juice of 1 lime

  • Salt to taste

🥣 Instructions:

  1. Mix all ingredients in a bowl.

  2. Let sit for 10–15 minutes so flavors meld.

  3. Taste and adjust lime and salt.

For a smoother salsa: pulse everything in a blender or food processor 3–4 times.


🥑 Classic Guacamole

✅ Ingredients:

  • 2 ripe avocados

  • ¼ cup finely chopped onion

  • 1 small tomato, diced (optional)

  • 1 tbsp cilantro, chopped

  • Juice of 1 lime

  • Salt to taste

  • Optional: Minced jalapeño for heat

🥣 Instructions:

  1. In a bowl, mash avocados with a fork (chunky or smooth, your call).

  2. Stir in onion, tomato, cilantro, lime juice, and salt.

  3. Serve immediately or cover with plastic wrap pressed directly on top to prevent browning.


📝 Serving Ideas:

  • Plate taquitos over shredded lettuce, drizzle with sour cream, and top with salsa & guacamole.

  • Serve with rice, beans, or a cold Mexican corn salad (elote).
