🍤 Shrimp Scampi
Ingredients (serves 4):

1 lb (450g) large shrimp, peeled and deveined

3 tbsp butter

2 tbsp olive oil

4–5 cloves garlic, minced

½ tsp red pepper flakes (optional for a bit of heat)

Juice of 1 lemon

Zest of 1 lemon (optional, for extra brightness)

¼ cup dry white wine or chicken broth (optional)

Salt and freshly ground black pepper, to taste

2 tbsp fresh parsley, chopped
-
Cooked pasta, rice, or crusty bread for serving
Instructions:

Heat butter and olive oil in a large skillet over medium heat.

Add garlic and red pepper flakes (if using), sauté for about 1 minute until fragrant—don’t burn the garlic!

Add shrimp, season with salt and pepper, and cook about 2 minutes per side until pink and opaque. Remove shrimp and set aside.

Deglaze the pan with white wine or chicken broth (if using), scraping up any bits from the bottom. Let it reduce for 1–2 minutes.

Stir in lemon juice and lemon zest.

Return shrimp to the pan and toss to coat in the sauce. Cook another minute just to warm through.

Sprinkle fresh parsley over top.

Serve immediately over pasta, rice, or with crusty bread to soak up the sauce.
