🥄🍌 Southern Banana Cobbler
📋 Ingredients
🍌 For the Filling:

5–6 ripe bananas, sliced (not mushy)

½ cup brown sugar

¼ cup granulated sugar

1 tsp vanilla extract

1 tsp ground cinnamon

¼ tsp nutmeg

2 tbsp cornstarch

1 cup whole milk

2 tbsp unsalted butter
-
Optional: a splash of bourbon or banana liqueur
🍞 For the Cobbler Topping:

1 cup all-purpose flour

¾ cup granulated sugar

1½ tsp baking powder
-
½ tsp salt
-
¾ cup milk
-
½ tsp vanilla extract
-
¼ cup melted butter
🧈 For the Cobbler Base:

¼ cup butter (to melt in the baking dish)
🔧 Instructions
✅ 1. Preheat Oven & Prep Pan

Preheat oven to 350°F (175°C).

Place ¼ cup butter in a 9×13-inch baking dish and put in the oven to melt while you prepare everything else.
✅ 2. Make the Banana Filling

In a saucepan over medium heat, melt 2 tbsp butter.

Stir in the brown sugar, granulated sugar, cinnamon, nutmeg, and cornstarch.

Slowly whisk in the milk, then bring to a gentle simmer.

Once thickened (2–3 min), remove from heat and stir in vanilla.

Gently fold in the banana slices.
✅ 3. Make the Cobbler Batter

In a bowl, whisk together flour, sugar, baking powder, and salt.

Add milk, vanilla, and melted butter. Stir until just combined (batter will be thin).
✅ 4. Assemble the Cobbler

Carefully remove baking dish with melted butter from oven.

Pour the batter evenly into the dish — do not stir.

Spoon the banana filling gently over the batter — again, do not stir. The layers will naturally bake into each other.
✅ 5. Bake

Bake at 350°F for 45–55 minutes, or until the top is golden brown and cooked through.
✅ 6. Cool & Serve

Let it cool slightly so it sets up.

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
