🍓🍰 Strawberry Honeybun Cake with Strawberry Cream Icing

🍽️ Serves: 12

⏱️ Ready in: ~1 hour

(30 min prep, 30 min bake + cooling)

📝 Ingredients

For the Cake:

  • 1 box yellow cake mix

  • 1/2 cup sour cream

  • 3/4 cup vegetable oil

  • 4 large eggs

  • 1/3 cup milk

  • 1/2 cup strawberry jam or preserves (seedless preferred)

  • 1/2 tsp vanilla extract

Strawberry Swirl Filling:

  • 1/2 cup brown sugar

  • 1 tsp ground cinnamon

  • 1/4 cup strawberry jam

  • Optional: finely diced fresh strawberries (about 1/4 cup)

For the Strawberry Cream Icing:

  • 2 cups powdered sugar

  • 1/4 cup pureed strawberries (fresh or frozen, strained if juicy)

  • 1–2 tbsp heavy cream or milk

  • 1 tbsp softened butter (optional, for richness)

  • Pinch of salt

  • Optional: drop of pink or red food coloring

👩‍🍳 Instructions

1. Preheat & Prep:

  • Preheat oven to 350°F (175°C).

  • Grease and flour a 9×13-inch baking dish.

2. Make the Cake Batter:

  • In a large bowl, mix cake mix, sour cream, oil, eggs, milk, and vanilla until smooth.

  • Fold in the 1/2 cup strawberry jam gently for a marbled look (don’t overmix).

3. Layer with Strawberry Swirl:

  • Pour half the batter into the pan.

  • Stir together the brown sugar, cinnamon, and 1/4 cup strawberry jam (plus diced strawberries if using).

  • Spoon the swirl mixture evenly over the batter and gently spread.

  • Pour the remaining batter on top and swirl lightly with a knife or skewer.

4. Bake:

  • Bake for 30–35 minutes, or until a toothpick comes out clean.

  • Cool slightly (15–20 minutes) before icing.

5. Make the Icing:

  • In a bowl, whisk together powdered sugar, pureed strawberries, butter (if using), and cream or milk until smooth and pourable.

  • Add more cream for a thinner glaze, or more sugar for thicker frosting.

6. Frost the Cake:

  • Pour icing over the warm cake and let it set.

  • Serve warm or at room temp — even better the next day!

🌟 Tips & Variations:

  • Add a cream cheese layer in the middle for extra richness.

  • Use strawberry cake mix for double-strawberry flavor.

  • Garnish with sliced strawberries, crushed freeze-dried berries, or white chocolate drizzle.
