Here’s a fun, easy, and family-approved Walking Taco Casserole — all the bold flavors of a walking taco layered in a hearty, oven-baked dish. Think seasoned beef, melty cheese, and crunchy chips, all in one!


🌮 Walking Taco Casserole Recipe

🧂 Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, chopped

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained

  • 1 (15 oz) can black beans, drained and rinsed (optional)

  • 1 cup corn (frozen, canned, or fresh)

  • 2 cups shredded cheddar or Mexican blend cheese

  • 3 cups crushed tortilla chips (or use whole corn chips like Fritos)

  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa, jalapeños, avocado


🔥 Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Brown the Beef:

    • In a skillet, cook ground beef and onion over medium heat until fully browned. Drain fat.

  3. Add Flavor:

    • Stir in taco seasoning, Rotel, corn, and black beans. Simmer for 5 minutes.

  4. Layer the Casserole:

    • In a greased 9×13-inch baking dish:

      • Layer ½ of the crushed chips

      • Spread all of the meat mixture on top

      • Sprinkle with half of the cheese

      • Add remaining chips, then top with the rest of the cheese

  5. Bake:

    • Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.

  6. Top & Serve:

    • Add your favorite taco toppings and serve warm!


🌶️ Tips & Variations:

  • Use Fritos for a more traditional walking taco vibe.

  • Add a layer of refried beans or cream cheese + salsa for extra richness.

  • Make it spicy with chopped jalapeños or hot sauce in the beef mix.
