🌮 Walking Taco Casserole Recipe
🧂 Ingredients:

1 lb ground beef (or ground turkey)

1 small onion, chopped

1 packet taco seasoning (or 2 tbsp homemade)

1 (10 oz) can Rotel (diced tomatoes with green chilies), drained

1 (15 oz) can black beans, drained and rinsed (optional)

1 cup corn (frozen, canned, or fresh)

2 cups shredded cheddar or Mexican blend cheese

3 cups crushed tortilla chips (or use whole corn chips like Fritos)

Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa, jalapeños, avocado

Preheat oven to 350°F (175°C).

Brown the Beef:

In a skillet, cook ground beef and onion over medium heat until fully browned. Drain fat.

Add Flavor:

Stir in taco seasoning, Rotel, corn, and black beans. Simmer for 5 minutes.

In a greased 9×13-inch baking dish:

Layer ½ of the crushed chips
